How to Dry Lavender

Harvest lavender when 50% of the flowers are in bloom. Harvest on a dry, sunny day after the dew has dried but before the sun is blazing. Cut each stem back to the first set of leaves. Bundle lavender in bouquets about 1 to 2 inches in diameter at the stem. Secure with rubber band, and use a bent paper clip to suspend the bouquets upside down in a cool, dry, dark place for about a month. Remove the dried flowers by rubbing the heads of bundles between your hands. Collect the blossoms on a clean surface. To preserve the fragrance, store in an airtight container.
